Question: Is it true that the conditions that cattle are kept in can alter their taste, if so how does this occur?

    I believe your right. There has been a tradition in some countries to grow young cows under low light (indoors) with minimal movement and exercise to keep the meat pale (white meat) and to enhance flavour and tenderness of the meat. This is pretty cruel. I don’t think the practice occurs in Australia.

    On the other side of the production cycle you definitely can see the response of cattle eating quality pastures. This is often associated with organic beef which can be quite good to eat.

  3. Yes there is a difference between grass and gain fed meat. Also the type of cattle breed can have different taste and propoerties – for example Waygu. There is some research being done on dark staining of meat. this is where the meat goes brown when on display in the supermarket, not because it is off but because of levels of metabolites in the muscle at the time of slaughter. that can result from genetics but also what state of mind they were in.

    The diet cattle are fed will alter how they taste. Like Kim said, if they are fed on grass or on grain can alter the fat content. Grain diets lead to more fat, and usually fat is considered to be more tasty. Grass diets provide more flavour to the meat, and so this is becoming a more ‘gourmet’ type of meat.

    Along with this, diet alters the colour of the fat. The green pigment in grass leads to the fat of the cattle looking more yellow than those grain fed
